Skillet brownies with marshmallows

These are so great served in mini cast iron skillets. You could also substitute peanut butter chips for a change.

Yields 6 3.5” mini cast iron skillets

  • 1 stick (4 oz) unsalted butter

  • 5 oz plus 1⁄2 cup semi-sweet or bittersweet chocolate chips, divided

  • 1⁄2 c granulated sugar

  • 2 eggs

  • 2 t vanilla

  • 1⁄2 c plus

  • 1 T all-purpose flour, divided

  • 1⁄2 t baking powder

  • 1⁄4 t kosher salt

  • 1⁄2 c mini marshmallows

Preheat oven to 350 degrees.

In a medium microwave-safe bowl, melt butter and 5 ounces of chocolate chips. Microwave for 20 seconds at a time, stirring in between, until mixture is smooth. Let cool briefly.

In a large bowl, whisk the sugar, eggs, and vanilla. Stir the chocolate mixture into the egg mixture. Add 1⁄2 cup flour, baking powder and salt and mix briefly until just combined. Toss remaining 1⁄2 cup chocolate chips with remaining 1 tablespoon of flour and fold in.

Spoon batter into skillets and smooth. Transfer to the oven and bake about 20 minutes. Sprinkle marshmallows on top and return to the oven for 5-7 minutes to finish baking and brown topping. Remove from the oven to a wire rack and cool 20 minutes. Serve with vanilla ice cream.
