Spiced Bourbon Pecans

These are so easy to make and very addictive. Use more cayenne if you like them extra spicy.

Yields 3 cups

  • 3 c pecan halves

  • 1 egg white

  • 1 t vanilla

  • 1 T bourbon (optional)

  • 1 t kosher salt

  • 1⁄4 c brown sugar

  • 1⁄4 c granulated sugar

  • 1⁄2 t cinnamon

  • 1⁄4 t ground black pepper

  • 1⁄8 - 1⁄4 t cayenne pepper

Preheat the oven to 350 degrees. Line a sheet pan with parchment or a non-stick silicone liner.

Whisk together the egg white, vanilla, and bourbon in a large bowl. Add the pecans and toss to coat them thoroughly with the mixture.

Combine sugars, cinnamon, black pepper, and cayenne in another bowl. Using a slotted spoon, transfer the pecans to the sugar mixture and toss to fully coat nuts on all sides.

Spread the pecans onto the prepared sheet pan in an even layer. Transfer the pan to the oven and immediately drop the temperature to 250 degrees.

Every 10 minutes, stir the pecans, until they’ve baked for a total of about 30 minutes. Pecans should look dryer and the sugar should look crystallized. If the pecans still seem wet, bake for another 5 minutes. Let cool completely.
