Braised Bok Choy with Apples, Onions, and Bacon

Serves 4-6

  • 4 T soy sauce

  • 4 T rice vinegar

  • 1⁄4 c brown sugar

  • 1 garlic clove, minced or pressed

  • 2 T fresh ginger, grated or minced

  • 1⁄4 t red pepper flakes

  • 1⁄3 c avocado oil

  • 2-3 large bok choy, tough ends trimmed, halved or quartered lengthwise

  • 1 yellow onion, diced

  • 2 apples, cored and diced

  • 2 slices bacon, diced

  • Kosher salt and black pepper

In a small bowl, combine soy sauce, rice vinegar, brown sugar, garlic, ginger, and pepper flakes. Stir and set aside.

In a large deep skillet (I use a wok), heat the oil over medium heat. Add the bok choy, cut side down, and sear on all sides, until browned and becoming tender, about 4 minutes each side. Season with salt. Remove bok choy from the pan and reserve.

If your pan is dry, add a little more oil. Then over medium heat, add the onion, apples, and bacon. Cook until the onion is translucent and the bacon has begun to crisp, about 5 minutes. sprinkle with a little salt and pepper and cook until softened, about 5 minutes. Add the bok choy back to the pan along with the soy sauce mixture. Stir to combine flavors and simmer about 3 minutes. Check the seasoning, adding salt if necessary.
