May 1 – Mint Julep & Chicken Sausage Skewers

The Kentucky Derby was supposed to be held tomorrow, but is now postponed until September. But a Mint Julep is a lovely drink so have one anyway. Crushed ice is the preferred way to go for this drink by the way. The skewers are really easy and open to interpretation. Make them your own.

Mint Julep

Makes 1 cocktail

  • 2 1⁄2 oz bourbon

  • 1 1⁄2 t sugar

  • 8 mint leaves

  • Water

Muddle mint leaves and bourbon in the bottom of a double old fashioned glass, or a julep cup if you have one! Fill the glass with ice, add the bourbon and stir. Top off with seltzer or sparkling water if desired. Garnish with a mint sprig.


Chicken Sausage Skewers

Yields about 15 skewers

  • 4 fully cooked chicken sausages, cut into 1” pieces (I’m using Aidells Chicken and Apple)

  • 1⁄2 a 12-oz jar roasted red peppers, drained and cut into 1”x1” pieces

  • 15 mozzarella balls, or cut a pieces that are about 1”x1”

  • 15 cherry tomatoes

  • Basil leaves

  • 15 bamboo skewers

Warm and lightly brown the sausages in a skillet with a little oil if needed, 7 minutes over medium heat.

Depending on the type of skewers you are using, either thread beginning with the sausage pieces first or last, cut end down so that the skewers can stand upright. Next thread on a tomato, a piece of pepper, then cheese, then a basil leaf. Salt and pepper the skewers. Serve with your favorite mustard if desired.
