Shaved Fennel Apple Salad with Walnuts and Dates

This salad showcases the crunchy, slightly licorice flavor of fennel, the sweetness of apple, which both pair so well with citrus. If you have a mandolin, use it to slice/shave the vegetables and this salad will come together quickly. Delicious!

Serves 4

  • 1 T orange juice

  • 3 T lemon juice

  • Zest of one lemon

  • 1⁄4 c extra virgin olive oil

  • 1⁄2 t kosher salt

  • 1⁄4 t black pepper

  • 2 apples, cored and thinly sliced

  • 1 fennel bulb, trimmed, quartered and thinly sliced

  • 3 stalks celery, thinly sliced

  • 1⁄4 of a red onion, thinly sliced

  • 1⁄2 c toasted walnuts, chopped

  • 1⁄4 c chopped medjool dates

  • 2 T chopped fresh fennel fronds (or dill) for garnish

In a medium bowl, whisk together the juices, zest, salt and pepper. Slowly whisk in the olive oil. Taste for seasoning, adding more salt and pepper if needed. Set aside.

Combine the shaved apples, fennel, celery and onion in a large serving bowl. Toss with the dressing. Add walnuts and dates, and toss again. Garnish with fennel fronds.
