Low-Carb Blueberry Vojitos

You can easily multiply the amounts by 8 to make a pitcher full of these refreshing drinks.

Blueberry Juice

1⁄2 c fresh or frozen blueberries

2 t sweetener (I used Allulose)

1⁄4 c water

Blend all ingredients in a mini food processor or blender (may have to double amount to use a blender). Strain to remove seeds and skins. Refrigerate and keep up to 1 week. Use excess in smoothies or cocktails.

Low-Carb Blueberry Vojito

Makes 1 cocktail

  • 8 fresh mint leaves

  • 1⁄2 oz lime juice

  • 1 t powdered

  • Swerve, or erythritol, or Allulose

  • 1⁄2 oz blueberry juice

  • 2 oz vodka

  • Sparkling water or club soda

  • Fresh blueberries and mint leaves for garnish

Put mint leaves, lime juice, Swerve, blueberry juice, and vodka in a cocktail shaker and use a muddler to crush the mint and release its oils. Fill the glass almost to top with ice, close, and shake vigorously for 15 seconds. Strain into an old fashioned glass filled with ice. Top with sparkling water or club soda. Garnish with fresh blueberries and mint leaves.
