Kimchi Avocado Toast Two Ways

If you’re gluten free or watching your carb intake, use a slice of halloumi cheese instead of bread for your “toast”.

Yields 1 toast

  • 1 avocado, halved and pitted

  • 2-3 T kimchi

  • 2 t sesame oil (optional)

  • Olive oil

  • 2 t everything bagel seasoning

  • 1 thick slice good-quality sourdough bread

  • 1 slice halloumi cheese, sliced 1⁄2” thick

  • 1 scallion, sliced

  • Kosher salt and pepper

Grill or toast bread, if using. Grill halloumi in a grill pan if you have one, otherwise in a small skillet with a little olive oil.

Scoop flesh from avocado and smash it onto the toast and the cheese. Sprinkle with salt and pepper and drizzle with a little sesame or olive oil. Place kimchi on top of avocado, drizzle on more oil of your choice, sprinkle with everything seasoning and sliced scallions.
