Sparkling Peachy Mint Sangria

A lovely, light sangria for hot summer afternoons. I recommend adding the stevia/sweetener last so you can judge for yourself how sweet you want it.

Serves 4-6

  • 8 mint sprigs, and/or basil

  • 1⁄2 c Aperol

  • 1⁄2 c peach liqueur or peach schnapps

  • 1 750-ml bottle prosecco

  • 2 c peach sparkling water, such as La Croix or Waterloo

  • Ice

  • 1 t liquid stevia, optional depending on how sweet you like your sangria (or use simple syrup)

Place the mint sprigs, Aperol, and peach liqueur in a pitcher and muddle the mint leaves to release the oils. Add prosecco, sparkling water, and ice. Stir and and taste for sweetness, adding stevia or simple syrup if you like. Pour into ice-filled glasses. Garnish with a sprig of mint.
