Chocolate Nut Butter Keto Fat Bombs
When you need a quick, satisfying snack, have some of these on hand.
8 oz cream cheese, softened
3 T coconut oil, solidified
1⁄2 c nut butter (I like NuttZo although it does have a few more carbs than others)
1-2 T Allulose or other non-sugar sweetener (optional)
1 t vanilla bean paste or extract
2-3 T shredded coconut, unsweetened
1⁄2 c sugar free dark chocolate chips (I like Choc Zero)
1⁄4 t kosher salt
Extra shredded coconut for coating
Combine all ingredients, except the extra coconut for coating, in a medium bowl and stir to combine. A fork works really well to mash the ingredients together. Use a spoon or small ice cream scoop to portion mixture into balls (about 1-2 tablespoons). Place balls in a mini muffin tin and freeze at least 15-20 minutes. Remove from the freezer and roll in shredded coconut. Can be kept refrigerated up to a week.
