Keto Green Superfood Smoothie

Yields 1-2 servings

  • 1⁄2 avocado

  • 1⁄4 of a small cucumber, peeled

  • 1 small stalk of celery

  • 1 small bunch of mint leaves

  • Juice of 1 lemon or lime

  • 1 c baby spinach leaves, kale, or any greens you like

  • 1⁄2 c full-fat coconut milk, add more if you like it creamy

  • 1 t matcha green tea powder

  • 2 t basil seeds, or chia seeds

  • 1 T MCT oil

  • 1⁄2 c water with a few ice cubes

  • 1 T Allulose or more to taste, or the sweetener of your choice (Allulose is 30% less sweet than sugar, so if you use another sweetener, use less)

Optional: I like to add a 1⁄2 teaspoon of reishi mushroom powder for an added immune system boost. It’s bitter, so you may need more sweetener.

Add all ingredients to a high-powered blender and mix until smooth and creamy. Add more water or ice if it’s too thick.

Refrigerate any leftovers for up to 3 days.
