Creamy Cucumber Radish Salad

A cool and creamy summer salad, great for a cookout or picnic because it holds off sogginess better than a green salad.

  • 2 seedless cucumbers, sliced

  • 1 1⁄2 t kosher salt, divided

  • 2 T extra virgin olive oil

  • 1⁄2 c sour cream

  • 1 T lime juice (or lemon)

  • 1 T apple cider vinegar

  • 1⁄2 t garlic powder

  • 1⁄2 t kosher salt

  • 1⁄2 t black pepper

  • 10-12 radishes, trimmed and thinly sliced

  • 2 T sweet onion, thinly sliced

  • 3 T chopped herbs, dill, mint, chives

Toss sliced cucumbers with 1 teaspoon of salt and place in a colander to drain off some of the water, up to one hour.

In a large serving bowl, whisk together the oil, sour cream, juice, vinegar, garlic powder, 1⁄2 teaspoon salt, and pepper.

Add the drained cucumbers, radishes, and herbs to the bowl with the dressing. Toss and serve.
