Easy Street Corn

Take your summer corn to the next level with this easy sauce to slather on grilled or boiled ears of corn.

Serves 6

  • 6 ears fresh corn

  • 1-2 T avocado oil

Sauce

  • 1⁄4 c sour cream

  • 1⁄4 c mayonnaise

  • 1⁄2 c cotija or feta cheese, crumbled

  • 2 cloves garlic, grated

  • Zest of one lime

  • 1 T lime juice

  • 1⁄2 t kosher salt

  • 1⁄8 t cayenne

  • 1⁄2 t chili powder, plus extra for garnish

  • 1⁄4 t smoked paprika

  • 1⁄4 c minced cilantro, plus extra for garnish

I like to grill my corn with the husks off to obtain grill marks. I coat each ear with a little avocado oil, then grill ears for 10 minutes, turning occasionally to cook evenly. If you prefer to leave the husks on, soak the ears in water for 10-20 minutes before you grill.

Combine all the sauce ingredients together, then taste for seasoning, adding a little more cayenne if you like spice, or salt if it needs it.

When corn comes off the grill, coat it in the sauce, sprinkle with a little extra chili powder and cilantro.
