Spinach Apple Salad with Goat Cheese
When you want a salad, but not just any salad. This one is just a little bit fancy, and so delicious.
Serves 4
1 recipe Favorite Balsamic Vinaigrette (see recipe below)
1 apple, cored and thinly sliced
3-4 oz crumbled goat cheese (or feta)
6 c baby spinach leaves, or a mix of spinach and power greens, washed and dried
Make vinaigrette.
Place greens in a salad bowl or on individual plates for serving. Top with apples, pecans, and goat cheese. Pour on the vinaigrette and toss. Serve.
Favorite Balsamic Vinaigrette
Add a teaspoon or two of honey or maple syrup if you like a little more sweetness.
Makes about 1⁄2 cup
1 T Dijon mustard
2 T balsamic vinegar
6 T extra virgin olive oil
1⁄2 t kosher salt
1⁄4 t pepper
In a small bowl, whisk together the mustard, vinegar, salt and pepper. Slowly drizzle in the olive oil while whisking constantly.
Or, add all ingredients to a mason jar and shake vigorously.
Vinaigrette can be kept in the refrigerator for up to 2 weeks.
