Apple Plum Cobbler

Apple Plum Cobbler
6 T unsalted butter
2 apples, peeled, cored, and quartered
2 plums
3⁄4 c all-purpose flour
11⁄2 t baking powder
2⁄3 c granulated sugar
1⁄2 t salt
1⁄4 t ground nutmeg
2⁄3 c whole milk
1 t vanilla bean paste or extract
3 T sparkling, turbinado, or Demerara sugar
Preheat the oven to 350 degrees. Add butter to a deep pie plate or a 2 quart baking dish. Place the pie plate in the oven to melt butter. Remove the plate from the oven and tilt to coat evenly with melted butter. Set aside.
Cut apple quarters into 4 wedges each. Slice plums to a similar size as apples. Set aside.
In a large bowl, whisk together the flour, baking powder, sugar, salt, and nutmeg. Stir in milk and vanilla and mix until smooth. Pour over the melted butter and do not stir.
Place the fruit slices over the batter. Sprinkle with the sparkling sugar.
Bake for 30-35 minutes, until the batter is set and the top is lightly browned and the fruit is bubbling. Let cool for or serve warm with vanilla ice cream.
