Noodle Soup for One with Mushrooms and Scallions

Makes 1 generous serving

Noodle Soup for One with Mushrooms and Scallions

If you have a crowd, just multiply amounts by the number of people to serve. See note below to make it vegan.

  • 1 T olive oil

  • 1 clove of garlic, sliced

  • 4 shiitake mushrooms, or any mushrooms, sliced

  • 2 scallions, sliced

  • 1⁄2 t kosher salt

  • 1 c water or chicken broth

  • 1 T soy sauce

  • 1 t fish sauce (optional)

  • 1⁄8 t red pepper flakes

  • 1 t ginger paste, or grated ginger

  • 1 cooked sausage, chopped, or any leftover meat, chicken, or tofu

  • 1 handful chopped spinach, or any greens

  • 2 oz any noodles, cooked and drained or precooked packaged

  • 2 T cilantro, chopped

In a soup pot, heat the olive oil. Add the garlic, mushrooms, and scallions. Sprinkle with salt and sauté on medium heat for about 4 minutes, until vegetables have softened but not browned. Add broth, soy sauce, fish sauce, pepper flakes, ginger, and 3⁄4 cup water and bring to a boil. Lower heat, and add sausage, spinach and noodles and simmer for 3 minutes until spinach has wilted. Taste, adding more soy sauce, pepper, or red pepper as needed. Garnish with cilantro.

NOTE: To make the soup vegan, replace sausage with firm tofu and omit fish sauce or use coconut aminos. Instead of chicken broth, use vegetable broth or water.
