Smoky Roasted Cauliflower with Spicy Mayo
This makes a great side dish or snack when you want something kinda healthy and keto.

Serves 4
1 large head cauliflower, cut into bite-sized florets
2 T extra virgin olive oil
1 T chipotle chili powder
2 t garlic powder
1 t cumin
1 t kosher salt
1⁄2 t black pepper
1⁄4 c mayonnaise
1⁄4 c sour cream
1 t lime zest
2 cloves garlic, pressed or grated
1⁄2 t chipotle chili powder
1⁄4 t smoked paprika
Pinch cayenne
Kosher and black pepper
2 green onions, sliced
Preheat oven to 425 (if you have a convection setting, use it). Line a sheet pan with parchment.
Arrange cauliflower florets on the sheet pan and toss with olive oil, chili powder, garlic powder, cumin, and salt and pepper. Transfer to the oven and roast for 20-25 minutes, until browned and tender.
Mix up the spicy mayo by combining all the ingredients, except the green onions, and then tasting to see if it has enough salt and spice for you.
Remove cauliflower from the oven to a serving platter and top with spicy mayo and green onions. Serve extra spicy mayo on the side.
