Slow Cooker Next-Level Baked Beans

Slow Cooker Next-Level Baked Beans

  • 1⁄2 lb ground beef

  • 1⁄2 lb bacon, diced

  • 1 small onion, chopped (about 3⁄4 c)

  • 1 garlic clove, chopped

  • 1/2c ketchup

  • 2 T red wine, or red wine vinegar

  • 1 T Dijon mustard

  • 1⁄3 c brown sugar

  • 1⁄2 t kosher salt

  • 1 can baked beans

  • 1 can butter beans or lima beans, drained

  • 1 can cannellini beans, drained

Brown ground beef and diced bacon in a Dutch oven, or in a slow cooker that has a sauté function, over medium heat. Break up clumps with a wooden spoon or spatula. After 5 minutes, add onion and garlic and cook, stirring occasionally, until onion starts to release moisture and turns translucent, 2-3 minutes. Drain all fat except 1 tablespoon.

If not using a slow cooker, transfer bacon mixture to a slow cooker (you can also continue using the Dutch oven and cook beans in the oven for about an hour at 350 degrees). Add all remaining ingredients and stir to combine. Cook on low for 4-6 hours.
