Strawberry Gin and Tonic

Makes 1 cocktail

Strawberry Gin and Tonic

Strawberry Simple Syrup

  • 10 large strawberries, hulled and quartered (save one or to halves for garnish)

  • 1 c water

  • 1 c granulated sugar

Cocktail

  • 2 oz strawberry simple syrup

  • 2 oz gin

  • 6 oz tonic water

  • Squeeze of lime (optional)

Make the syrup first by placing all ingredients in a small saucepan. Bring to a boil, then reduce heat to a simmer until strawberries are soft, about 15 minutes. Strain the liquid through a sieve. Let syrup cool and refrigerate. Can be kept in the refrigerator for up to a week.

Make a cocktail by adding the strawberry syrup to a cocktail glass half filled with ice. Pour the gin over and add the tonic water. Add a squeeze of lime if desired. Garnish with a strawberry.
