Makes 9 brownies

S'mores Brownies

  • 9 graham crackers

  • 11⁄2 sticks (12 T) unsalted butter

  • 6 oz good quality unsweetened chocolate, chopped

  • 4 eggs

  • 13⁄4 c granulated sugar

  • 2 t vanilla

  • 11⁄2 c all-purpose flour (or a gluten free flour mix)

  • 1⁄2 baking powder

  • 1⁄2 t kosher salt

  • 10 oz marshmallows, minis or large, if large, halve or quartered

Line a 9x9” square cake pan with a sheet of parchment paper and let the excess overhang the pan. Grease or spray parchment. Line the bottom of the pan with graham crackers, breaking them to fit. If there are some left over, set them aside for garnish. Preheat oven to 350 degrees.

In a heavy bottomed saucepan, melt butter and chocolate over low heat, stirring occasionally, until smooth. Set aside to cool.

In a large bowl, briskly whisk the eggs, granulated sugar, and vanilla together until light yellow and thick. Add the cooled chocolate/butter mixture and beat until combined. Fold in the dry ingredients and mix briefly until just combined.

Spread brownie batter in prepared pan and smooth. Transfer the pan to the oven and bake for 25-30 minutes, until a cake tester comes out with only a few crumbs.

Remove pan from the oven and preheat broiler. Sprinkle marshmallows on top and broil 3-5 minutes until browned. Remove from the oven to a wire rack and cool in the pan for at least 1 hour before cutting.
