Simple Tilapia Fillets with Melted Leeks and Shallots

Simple Tilapia Fillets with Melted Leeks and Shallots

  • 4 tilapia fillets (about 11⁄4 lbs)

  • Kosher salt and black pepper

  • 3 T butter, divided

  • 1 large shallot, minced

  • 3 leeks (about 1 1⁄2 lbs), cleaned and trimmed

  • 1⁄4 c dry white wine

  • 1 T minced chives

  • Lemon wedges for garnish

Preheat the oven to 375. Season fish with salt and pepper on both sides. Set aside.

Add 2 tablespoons butter to a large skillet. Add shallot and a pinch of salt and sauté over medium heat briefly, about 2 minutes. Add the leeks and cook, stirring, for about 4 minutes. Add the wine and continue to cook for 2 more minutes. Remove skillet from the heat and transfer the contents to an oven-proof baking dish.

Place fish fillets on top of leeks. Cut the remaining tablespoon of butter into small pieces and dot over the fillets. Transfer the dish to the oven and bake for about 9 minutes, depending on the thickness of your fillets.

Squeeze some lemon over the fillets and garnish with chives.
