Oven Roasted BBQ Ribs
These are so easy because the oven does most of the work. Definitely double the recipe if you have a hungry crowd.
2 lb baby back ribs (1 rack)
Rub
1 t ground black pepper
2 t kosher salt
1 t ground cumin
1 t paprika
1 t chili powder
1⁄2 c brown sugar, light or dark
1 T garlic powder
1⁄4 t cayenne (or more to taste)
Barbeque Sauce
1 c ketchup
1 c packed brown sugar
1⁄4 c water
1⁄4 c apple cider vinegar
1 T Worcestershire sauce
2 T honey or molasses
1 t kosher salt
1 t garlic powder
1⁄4 t cayenne
Preheat oven to 300 degrees. Line a large sheet pan with foil.
Mix all rub ingredients together in a small bowl. Coat ribs with the rub. Place the rack of ribs on the prepared sheet pan. Cover with foil and roast until tender, about 2 hours.
Make sauce by combining all sauce ingredients in a medium saucepan. Bring to a boil, then lower heat and let simmer until thickened, about 1 hour.
Preheat broiler (or grill). Remove the foil, drain the pan of some of the pan juices, and coat with barbeque sauce. Broil watchfully until sauce begins to caramelize, 3-5 minutes.
