Avocado Toast with Roasted Figs

If you’re gluten free or watching your carb intake, use a slice of halloumi cheese instead of bread for your “toast”.

  • 1 avocado, halved and pitted

  • 2-3 figs, sliced 1⁄2” thick

  • Olive oil

  • Balsamic glaze

  • 2 t everything bagel seasoning

  • 1 or 2 thick slices good-quality sourdough bread

  • Kosher salt and pepper

Grill or toast bread, if using. Grill halloumi in a grill pan if you have one, otherwise in a small skillet with a little olive oil.

Coat figs with a little olive oil and broil in the oven or toaster oven for 3-4 minutes.

Scoop flesh from avocado and smash it onto the toast. Sprinkle with everything bagel seasoning and drizzle with a little olive oil. Place roasted figs on top of avocado, drizzle on more oil and balsamic glaze. Sprinkle with a little salt if desired.
