Charcoal Simple Syrup

Makes 1 cocktail
Charcoal Margarita
For Tajin salted rim:
Lime wedges
Kosher salt
Tajin Seasoning
Charcoal Simple Syrup
Combine 1⁄2 cup water, 1⁄2 cup sugar and 1⁄2 teaspoon activated charcoal powder over medium heat until sugar is melted. Whisk to combine. Let cool.
Recipe for 1 cocktail:
2 oz good-quality blanco tequila
1⁄2 oz Triple Sec
11⁄2 oz fresh lime juice
1 oz charcoal simple syrup
Garnish: dehydrated lime wheel* (or a fresh lime wheel)
Salt the rim of the glass by placing equal amounts salt and Tajin on a plate. Wet rim by running a lime wedge around the edge. Roll rim through the salt. Set aside.
Fill a cocktail shaker halfway with ice. Add tequila, Triple Sec, lime juice, and charcoal simple syrup. Shake vigorously for 20 seconds. Strain into the prepared glass. Garnish with lime wheel.
*To make dehydrated lime wheels, I thinly sliced a lime, then set my Breville Smart Oven to ‘dehydrate’ setting and 125 degrees. I placed lime slices on the rack in a single layer and dried them for 12 hours (overnight and a bit more).
