Chocolate Banana Snack Cake

Makes 1 8x8 or 9x9 cake pan
Chocolate Banana Snack Cake
The ultimate snacking cake, ready in under an hour, and so satisfying.
3 medium ripe bananas, mashed, about 1 cup
1⁄2 c granulated sugar
1 egg
3 T unsalted butter, melted
2 T milk
1 t vanilla
3⁄4 c all-purpose flour
1⁄2 t ground cinnamon
1⁄2 t baking soda
1⁄4 t kosher salt
1⁄8 t ground nutmeg
1⁄2 c semisweet chocolate chips, extra for topping
Preheat the oven to 350 degrees. Line a square baking pan (8x8 or 9x9) with parchment and let the excess overhang two opposite sides. Spray parchment. Set aside.
In a medium bowl, mash the bananas with a fork. Add the sugar, vanilla, butter, milk, and egg. Beat with fork to combine.
Combine the dry ingredients and mix them together to combine.
Add the dry ingredients to the wet, folding until just mixed. Fold in 3⁄4 of the chocolate chips. Pour the batter into the pan. Sprinkle remaining chocolate chips on top.
Bake for about 20 minutes, checking doneness by inserting a toothpick or cake tester, which should come out mostly clean. Add 5 minutes at a time, if they need to bake more, checking after each 5 minute interval.
Remove from the oven and let cool on a wire rack.
