1 lb salmon, skinless and cut into bite-sized cubes
2 T cajun seasoning
Cajun Seasoning
2 T Kosher salt
1 T ground black pepper
2 T paprika
1 T smoked paprika
1 T dried oregano
2 T garlic powder
1 T onion powder
1 T cayenne
Topping options for serving:
2 c cooked rice
2 c mixed salad greens
1c shredded cabbage
Sliced scallions
Cucumber
Avocado
Jalapeno
Cilantro
Sriracha Sauce
1⁄2 c mayonnaise
1⁄4 c sriracha, or to taste
1⁄4 c sweet chili sauce
1 T Korean chili sauce
Make sriracha sauce by whisking mayo with sriracha, sweet chili sauce, and Korean chili sauce in a small bowl. Set aside.
Preheat air fryer to 450 degrees (or use a conventional oven and broil for about 5 minutes).
Season the cubed salmon with cajun seasoning. Transfer to the air fryer and cook for 7-9 minutes, depending on the size of your chunks.
Divide rice, if using, among bowls and top with greens, cabbage, and any or all of the toppings you wish. Divide salmon among bowls, and drizzle with sriracha sauce.
