Blueberry Bars

So easy, so good, so hard to stop eating them!

  • 2 1/2 c all-purpose flour

  • 2/3 c granulated sugar

  • 1/2 t kosher salt

  • 1 c + 2 T unsalted butter, slightly soft, cut into cubes, divided

  • 1/4 c light brown sugar

  • 1/4 c rolled oats

  • 3/4 c blueberry jam

  • 3/4 c fresh blueberries

  • Juice of half a lemon

Preheat the oven to 375. Line a 9x13" (or 9x9" if you want a thicker crust, increase first bake time by 10 min) baking pan with parchment, leaving the overhang on the sides to easily lift out cooled bars. Butter or spray.

Add flour, granulated sugar, and salt to a mixing bowl. Cut in 1 cup of butter using a paddle (stand mixer), or use a hand mixer, your hands and two butter knives, or a pastry blender.

Reserve 1 cup of dough and place in a small bowl to make topping. Set aside.

Dump remaining dough into the prepared pan and use your fingers to press it into an even layer. Bake for 15 minutes.

Make crumble topping by adding brown sugar, oats, and 2 tablespoons of reserved butter to the reserved crumbs. Use your fingers to work the mixture into a crumble.

Mix together the jam, blueberries, and lemon. Mash some of the blueberries then spread the filling onto the hot crust. Sprinkle the crumble topping over the filling. Bake for 20-25 minutes.

Let bars cool 1 hour in the pan before lifting them out using parchment overhang and cutting into rectangles.
