Pineapple Tequila Cocktail

Makes 1 cocktail
Pineapple Tequila Cocktail
2 oz pineapple juice
1⁄2 oz orange liqueur like Cointreau ou Grand Marnier
11⁄2 oz pineapple-infused silver tequila
Sparkling or seltzer water
1⁄2 lime cut into thin wheels
Pineapple spears
Chile-lime seasoning
Pineapple Infused Tequila: Cut pineapple into spears. Place 6-8 pineapple spears and 1 cup silver tequila in a glass or deep bowl. Let infuse 6 hours or overnight.
Remove pineapple spears from the tequila and sprinkle with chile-lime seasoning. Moisten edge of a cocktail glass with a piece of pineapple. Roll a partial edge of the glass in chile-lime seasoning. Set aside.
Put pineapple juice, orange liqueur, and tequila into a cocktail shaker filled with ice. Shake well for 20 seconds. Strain into the prepared cocktail glass half filled with ice and top off with sparkling water. Garnish with a pineapple spear sprinkled with chile-lime seasoning. Enjoy!
