Crispy Parmesan Acorn Squash Rings

Crispy Parmesan Acorn Squash Rings

This is an easy but delicious side inspired by crispy parmesan potatoes.

  • 2 acorn (or delicata) squash, seeds removed, sliced

  • 1⁄4 c olive oil

  • 1⁄2 t smoked paprika

  • 1⁄4 t crushed red pepper

  • 1⁄2 t garlic powder

  • 1⁄2 t kosher salt

  • 1⁄4 c chopped parsley

  • 1 c grated Parmesan cheese

Preheat oven to 425.

Combine olive oil, smoked paprika, red pepper, garlic powder, salt, and parsley in a bowl.

Place Parmesan cheese in a shallow plate or bowl.

Toss squash in olive oil mixture, then press both sides into the Parmesan and place into a baking dish.

Sprinkle any remaining Parmesan on top of the squash.

Bake for 20 minutes until cheese is golden brown.
