April 10 – Local Beer & Guacamole

I love guacamole. It is one of those dips that feels like a treat but also has the advantage of being good for you too. Avocados are high in essential healthy fats, fiber, rich in vitamins B, E, and K, and potassium. Make a batch and enjoy!

Guacamole

Serves 4

  • 3 avocados - peeled, pitted, and mashed

  • 1 lime, juiced

  • 1⁄4 t lime zest

  • 1⁄4 c diced sweet onion

  • 1 t kosher salt

  • 1⁄4 t ground cumin

  • 3 T chopped cilantro

  • 2 T chopped tomatoes

  • 1⁄8 t cayenne

  • 1 t minced garlic

In a medium bowl, mash the avocados with the lime juice, zest, salt, cumin, cayenne, and garlic. Stir in the onions, cilantro, and tomatoes. Taste and add more salt or spice if needed. For best flavor, refrigerate for an hour before serving. Be sure to press a piece of plastic wrap onto the surface of the guacamole to prevent it from turning brown due to oxidation.
