April 11 – Dalgona Coffee & Carrotty Crumb Cake
You’ve definitely seen this whipped two-tone coffee trending all over the internet. Probably not something I’d whip up every weekday morning, but it adds a special touch to a leisurely weekend breakfast or brunch. Try it and see.
Dalgona Coffee
Makes 1 drink
2 T instant coffee
1⁄2 - 2 T granulated sugar (I used 1 T and it was sweet)
2 T hot water
Milk
Ice
In a medium bowl, combine the coffee, sugar, and hot water and begin whisking. Keep whipping until the liquid becomes, frothy, then foamy, then thick and creamy and lightens to a light caramel color.
Fill a glass halfway with ice and milk, then top with the coffee fluff. Stir to combine or leave separated for maximum wow-factor.
Carrotty Crumb Cake
I like to think of this as a healthy-ish coffee cake. I may be kidding myself, but I love crumb cakes of any kind, and it feels good to add in some vegetables. This is a fabulous option for brunch or breakfast. The drizzle is overkill maybe, so it’s optional. I recommend it though!
Serves 8-10
2 carrots, shredded using a cheese grater or your food processor (1 1⁄2 c)
1⁄3 c melted unsalted butter (you could also use oil, avocado would be my preference)
3⁄4 c granulated sugar
2 eggs
1 t vanilla
1 1⁄4 c all-purpose flour
1 t baking soda
1 t baking powder
1⁄2 t kosher salt
1 t cinnamon
1⁄4 t grated nutmeg
Crumb Topping
4 T unsalted butter, melted
3⁄4 c flour
1⁄2 c light brown sugar
1 t cinnamon
Pinch of salt
Drizzle Frosting (optional)
3⁄4 c confectioners sugar
1⁄2 t vanilla
1 T heavy cream
Preheat oven to 350 degrees. Butter a 9” springform pan. Place a parchment round in the bottom of the pan and butter it, then flour pan.
In a large bowl, whisk together the butter, sugar, eggs, and vanilla until smooth. Stir in the carrots. Add in all the dry ingredients and stir to combine. Batter will be thick. Spread batter into the prepared pan.
In the same bowl, prepare the crumb topping by combining all the ingredients with a spatula. Using your hands, squeeze the mixture to make crumbs. Top the cake batter with the crumbs.
Bake 30 minutes, until the center is just set. Cool completely before drizzling. Prepare the drizzle frosting by whisking all ingredients in a small bowl.
