Watermelon Mint Paloma
2 oz tequila
1 1⁄2 oz grapefruit soda (I used La Croix)
1⁄4 c cubed watermelon
Sprig of mint
1⁄2 oz simple syrup or agave nectar
1⁄2 oz lime juice
Watermelon wedge for garnish
Mint leaves for garnish
Sugar and chili for rims (optional)
Sugar (or salt) the rim of your glass by placing sugar on a plate with chili powder. Wet the rim of the glass with a lime wedge. Roll the rim through the sugar/chili mixture. Set aside.
In a cocktail shaker, add tequila, watermelon, mint, simple syrup, and lime juice. Use a muddler to mash the watermelon and extract the juices. Add ice and shake vigorously for 15 seconds. Strain into the glass filled with ice. Top off with grapefruit soda and garnish with a mint sprig and watermelon wedge
