Pomegranate Ginger Paloma

A holiday version of the traditional Paloma, jazzed up with some ginger.

Ginger Syrup

  • 1⁄2 c honey

  • 1⁄2 c water

  • 1” knob fresh ginger, chopped

  • 8 mint leaves

Cocktail

  • 3 oz tequila

  • 1⁄3 c pomegranate juice

  • 1⁄4 c fresh grapefruit juice

  • Juice of 1⁄2 a lime

  • 3 T ginger syrup

Ginger beer or sparkling grapefruit-flavored water (such as La Croix or Waterloo)

Bring honey, water, and ginger to boil in a small saucepan. Remove the pan from the heat and add the mint. Cover and steep for 10-15 minutes. Strain. Can be refrigerated for up to 2 weeks.

For the cocktail, pour all ingredients except sparkling water into a cocktail shaker filled halfway with ice. Shake vigorously for 15 seconds. Strain into a glass. Top off with ginger beer or sparkling water. Garnish with a sprig of mint.
