Citrus Soy Marinated Pork Tenderloin
Delicious and so easy. Marinade it the night before and you’ll be halfway there.
Pork
1 1lb pork tenderloin, trimmed, silver skin removed
1 c orange juice, preferably fresh squeezed
1⁄2 c lime juice
4 cloves garlic, grated or pressed
1⁄2 yellow onion, diced
1⁄2 c soy sauce, or coconut aminos
1⁄2 red pepper flakes
1 1” knob fresh ginger, grated
Preheat grill.
Combine orange juice, lime juice, garlic, onion, soy sauce, red pepper flakes, and ginger in a large resealable plastic bag. Add the pork and seal the bag tightly. Refrigerate at least 8 hours or overnight.
Remove pork from the marinade. Season pork lightly with salt and pepper. Pour the contents of the bag into a medium saucepan. Bring to a boil over medium high heat and reduce by half. Set aside to use as sauce for the pork.
When grill is hot, place pork on a lightly oiled grate and cook for 4-5 minutes per side, turning frequently, until the internal temperature registers 145 degrees. Remove pork from the grill, tent with foil, and allow to rest 10-15 minutes before slicing.
Drizzle with sauce and serve.
