Makes 1 cocktail

Butterfly Pea Gin Cocktail

Butterfly Pea Simple Syrup

  • 1⁄2 c water

  • 1⁄2 c granulated sugar

  • 1⁄4 t butterfly pea powder

Cocktail

  • 1⁄2 oz butterfly pea simple syrup

  • 2 oz gin

  • 1⁄2 oz fresh lemon juice

  • 3 oz prosecco

Make the syrup first by placing the water and sugar in a small saucepan. Bring to a boil, then turn off heat and whisk in the butterfly pea powder. Let sit for 2 minutes, then whisk again. Set aside (can be kept in the refrigerator for up to 2 weeks).

Make the cocktail by adding the syrup and gin to a cocktail shaker half filled with ice. Shake vigorously to combine. Strain into a glass over ice and top off with prosecco. Slowly pour in lemon juice, stir and watch it turn from blue to purple!

Garnish with a slice of lemon.
