Pumpkin Spice Moscow Mule
The perfect fall cocktail with that ubiquitous pumpkin spice and a hint of lime
2 oz vodka
1 oz Pumpkin Spice Syrup (recipe below)
1 oz lime juice (about 1⁄2 a large lime)
5-6 oz ginger beer
Cinnamon for garnish
Squeeze the lime into a copper mug and drop in the squeezed shell. Fill the mug 3⁄4 with ice.
Add the vodka and syrup. Top off with ginger beer and stir to combine. Garnish with a little ground cinnamon and a cinnamon stick.
Pumpkin Spice Syrup
1⁄2 c brown sugar
1⁄2 c granulated sugar
1 c water
1⁄4 c pumpkin puree
1⁄2 t vanilla
2 t pumpkin pie spice
Combine sugars and water in a saucepan over medium heat. Add pumpkin, vanilla, and spice and simmer for 5 minutes. Remove from the heat and let steep for 15 minutes. Strain and let cool. Can be kept refrigerated up to two weeks.
