Fresh Peach Buckle

A delicious, moist vanilla cake studded with peach slices is a quick but satisfying dessert. Add whipped cream or vanilla ice cream if you wish.

  • 1⁄2 c (1 stick) unsalted butter

  • 3 ripe peaches, halved, pitted, peeled and sliced into 1⁄8ths

  • 1 c + 2 T granulated sugar

  • 1 c all-purpose flour

  • 1⁄2 t kosher salt

  • 2 t baking powder

  • 1 c whole milk (or almond, oat, or coconut milk)

  • 2 t vanilla bean paste or extract

  • 2 T sparkling sugar, or demerara sugar

Preheat the oven to 350 and melt the butter in a 10” cast iron skillet or a 9”x 9” baking dish.

Sprinkle the peach slices with 2 tablespoons of sugar and set aside.

In a medium bowl, stir together flour, salt, and baking powder to combine. Add the remaining cup of sugar, milk, and vanilla. Whisk to combine. Whisk in the melted butter until the mixture is smooth.

Transfer the batter (it will be thick) to the skillet or baking dish. Arrange peach slices on top of batter. Sprinkle with sparkling sugar.

Bake buckle for 45-55 minutes, until a cake tester comes out clean.

Serve warm or at room temperature, with whipped cream or vanilla ice cream.
